FOOD CHANGES TO FOLLOW

Copenhagen the city of design. True, but I would like to call it the city of food as well. It seems like the city is a leader when we talk about developments in the field of food and hospitality. Mostly I see change in the used ingredients and eating habits of the Danes. I will tell you the most remarkable things and in addition I will give you some must-eat hot-spots.


100% ecological. In Copenhagen ecological food is no longer in fashion, it’s normal. At the most restaurants and shops it’s clearly indicated that their products are ecological and a lot of times Fair-Trade as well. Daily there is a food market called Torvehallerne. Here you’ll find different kinds of shops like groceries, bakeries and small restaurants. The shops are really authentic and most of them are selling fresh (regionally) and healthy products. Copenhagen has a 100% ecological restaurant called Manfreds. This restaurant is completely transparent, while dining you look into the kitchen. It is indicated where products come from and that’s always regionally.


No fastfood. Remarkable is the fact that I didn’t saw a lot of Fast-food companies, like we do in the Netherlands. It seems like healthier companies have rejected fast-food restaurants. For example; Grod; where you can have a healthy porridge-breakfast or risotto-meal. Or more famous Joe & the Juice,where you can have lunch and enjoy a smoothie. Joe & the Juice I saw more than the Mac Donald’s, and I think that’s a big evolution. The fact that fast-food seems to disappear I can connect with the fact that I saw relatively few people who are overweight.


Coffee to connect. Coffee and Danes are inseparable. In Copenhagen you’ll find plenty of coffee shops. Often these shops are used as a place to work and meet. Many people are sitting behind their Macbook, sipping some coffee. Alone, in a meeting or just there to meet new people. Funny fact is that the cafes are decorated in their own unique style. Regularly vintage furniture is used; thereby we see that the Danes are conscious again. Coffee-hotspots are Laundromat; a place with a lot of books and even like the name says a laundromat. Granola, a coffee lounge that is really nostalgic. Kaffe & vinyl, not very noticeable, but it’s fun because you can play the really old records while drinking coffee.


I can tell a lot more about Copenhagen and her food-mecca. But it’s clear that Copenhagen is a leader and a source of inspiration in the field of food and hospitality. It seems like most of the Danes are having a conscious and a sustainable lifestyle. In the Netherlands the trend sustainability will grow and if you ask me consciousness will become more popular. We haven’t reached the point that Mac Donalds is replaced by Joe & the Juice. But I see changes; the Dutchman is getting more conscious, of themselves and the world. It will take some time but I dare to predict that organic food will become normal in the future. Let’s say that Denmark is the trendsetter and we are lucky to follow.
